Amber Contreras

Nutrition and Lifestyle Coach

My Story:

I spent more than 40 years dieting. I tried the programs, the apps, the counting, and in 2018 I had gastric bypass surgery, sure that this time would be different. Every time I lost weight, I'd regain it and blame myself. I thought I was the problem.

PFC3 changed everything. For the first time, someone taught me to fuel my body instead of fighting it. I learned that stabilizing my blood sugar mattered more than any number on a scale. My husband, Chef Tom, went through it with me, and we both got our energy, confidence, and lives back.

I'm a former elementary school teacher, so teaching is in my bones. Now I'm a certified PFC3 health and nutrition coach and the founder of The Freedom Journey, a year long 1:1 program for women 40+ who are done restarting. I'm also in perimenopause myself, so I'm not coaching from the other side of this. I'm walking the same road, just a few steps ahead.

Why I am passionate about helping others:

Because I was her. I was the woman who thought she was broken, who tied her worth to the scale and started over every Monday. No one had ever told me it wasn't my fault. Now I get to be the person who tells women the truth: your body isn't the enemy, and you're not lazy. You've just been given the wrong tools. Watching a woman start trusting herself again never gets old.

My favorite mindset tip:

Aim for 1% better, not perfect. Perfection is what keeps us stuck in the restart cycle. When life shows up (and it will), you don't start over. You just take the next small step forward. Progress over perfection, every single day.

My favorite nutrition tip:

Never eat a carb alone. Pair protein, fat, and carbs together every 3 hours. It keeps your blood sugar steady, which means fewer cravings, no afternoon crash, and energy that lasts. Fuel your body; don't deprive it.

My favorite sustainability tip:

Build systems for when life gets messy, not just for when it's easy. When you prepare for your hard days, you don't need willpower. That's what makes this a lifestyle instead of another diet.
